🔥Cheese, Potato & Smoked Sausage Casserole 😋
👉Ingredients:
3 cups Russet potatoes, peeled, cubed, and boiled until tender (but not mushy)
1 lb smoked sausage, thinly sliced
4 tbsp butter
4 tbsp all-purpose flour
2 cups half & half or whole milk
Salt & black pepper, to taste
1/2 lb (8 oz) Velveeta cheese, cubed
1/2 cup shredded sharp cheddar cheese
1/4 tsp smoked paprika
Olive oil (1–2 tbsp for cooking sausage)
👉Instructions:
✅️1. In a large skillet over medium-low heat, add 1–2 tablespoons of olive oil and cook the sliced sausage, stirring and flipping until lightly browned.
✅️2. Lightly grease a 9x13 inch baking dish with non-stick spray. Add the boiled potatoes and cooked sausage to the dish, and gently stir to distribute them evenly.
✅️3. In the same skillet, increase the heat to medium. Melt the butter, then whisk in the flour. Keep whisking for about a minute to cook off the raw flour taste.
✅️4. Gradually add the half & half (or milk), about 1/4 to 1/2 cup at a time, whisking constantly to avoid lumps. Cook until the sauce thickens.
✅️5. Stir in the Velveeta cheese, smoked paprika, and season with salt and pepper. Stir occasionally until the cheese melts and the sauce is smooth.
✅️6. Pour the cheese sauce evenly over the potatoes and sausage in the baking dish. Sprinkle the shredded cheddar cheese over the top.
✅️7. Bake in a preheated oven at 350°F (175°C) for 35–45 minutes, or until the casserole is golden on top and the potatoes are fully tender.
