3 pounds bone-in, skin-on chicken thighs
1 cup pineapple juice
1/2 cup soy sauce

2 tablespoons grated fresh ginger

2 teaspoons sesame oil
1 tablespoon cornstarch
1 tablespoon water
Fresh pineapple slices (optional, for garnish)

👉Instructions:
✅️1. Preheat your oven to 375°F (190°C). Place the chicken thighs in a single layer in a large baking dish.
✅️2. In a medium saucepan, combine the pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, garlic, and sesame oil. Bring to a gentle boil over medium heat.
✅️3. Reduce the heat and let it simmer for about 10 minutes, stirring occasionally, until slightly thickened.
✅️4. Mix the cornstarch with water in a small bowl to make a slurry. Stir it into the simmering sauce and continue whisking until the sauce thickens enough to coat a spoon.
✅️5. Pour the sauce evenly over the chicken, making sure each piece is well coated.
✅️6. Bake uncovered for 45 minutes to 1 hour, or until the chicken is fully cooked (internal temp should be 165°F or 74°C) and the sauce is bubbly and caramelized. For extra flavor, spoon some of the sauce over the chicken halfway through baking.
✅️7. Remove from oven and let it rest for a few minutes. Garnish with pineapple slices, green onions, and sesame seeds if desired.
