📝 Ingredients
For the Chicken Bites:
1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
3 tbsp butter
4 garlic cloves, minced
1 tsp smoked paprika
1 tsp Cajun seasoning
Salt and black pepper to taste
For the Spicy Cajun Alfredo Pasta:
12 oz twisted pasta (like fusilli or rotini)
2 tbsp butter
3 garlic cloves, minced
1½ cups heavy cream
1 cup grated Parmesan cheese
½ cup shredded mozzarella cheese
1 tsp Cajun seasoning (adjust to taste)
½ tsp crushed red pepper flakes (optional, for extra heat)
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
👨🍳 Instructions
1. Cook the pasta:
Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions. Drain and set aside.
2. Make the chicken bites:
In a large skillet, melt 3 tbsp butter over medium-high heat. Add minced garlic and cook for 30 seconds. Add chicken, smoked paprika, Cajun seasoning, salt, and pepper. Cook for 6–8 minutes until the chicken is golden and fully cooked. Remove and set aside.
3. Prepare the Alfredo sauce:
In the same skillet, melt 2 tbsp butter over medium heat. Add garlic and sauté for about 1 minute. Slowly pour in the heavy cream, stirring constantly. Once it simmers, add Parmesan and mozzarella cheeses. Stir until melted and smooth. Season with Cajun spice, red pepper flakes (if using), salt, and pepper.
4. Combine pasta and sauce:
Add the cooked pasta to the Alfredo sauce and toss to coat evenly.
5. Add the chicken back in:
Return the chicken bites to the skillet and mix everything gently. Let it heat through for 2 minutes.
6. Serve hot, garnished with freshly chopped parsley.
