🍝 Delicious Short Rib Beef Ragu Recipe 🍖
A rich, comforting dish perfect for cozy evenings or special family dinners.
👉Ingredients:
- 2 lbs bone-in beef short ribs
- 1 tbsp olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, finely chopped
- 2 celery stalks, finely chopped
- 1 can (28 oz) crushed tomatoes
- 1/4 cup tomato paste
- 3 cups beef broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 bay leaves
- Salt and black pepper to taste
- Fresh basil or parsley, for garnish
- Cooked pappardelle, rigatoni, or any pasta you love
👉Instructions:
✅️1. Sear the Short Ribs:
- Season the ribs generously with salt and pepper.
- In a large pot or Dutch oven, heat olive oil over medium-high heat.
- Sear the short ribs on all sides until browned (about 3–4 minutes per side). Remove and set aside.
✅️2. Sauté the Veggies:
- In the same pot, add chopped onions, carrots, and celery.
- Cook for 5–6 minutes until softened.
- Add the minced garlic and sauté for another minute until fragrant.
✅️3. Deglaze the Pot:
- Pour in a splash of the beef broth, scraping up the browned bits at the bottom of the pot.
- Let it simmer for 2–3 minutes to reduce slightly.
✅️4. Add Tomatoes and Herbs:
- Stir in the crushed tomatoes, tomato paste, remaining beef broth, oregano, thyme, bay leaves, salt, and pepper.
- Return the short ribs to the pot, making sure they’re mostly covered in sauce.
✅️5. Slow Cook:
- Cover and reduce the heat to low.
- Let the sauce simmer gently for 2.5 to 3 hours, stirring occasionally, until the ribs are fall-off-the-bone tender.
✅️6. Shred the Meat:
- Once tender, remove the ribs from the pot.
- Shred the meat using two forks, discarding the bones and any excess fat.
- Return the shredded meat to the sauce and stir to combine.
✅️7. Serve and Enjoy:
- Spoon the rich ragu over cooked pasta like pappardelle or rigatoni.
- Garnish with chopped fresh basil or parsley. Add grated Parmesan if you like.
