🔥Slow-Cooker Beef Stew (Rich & Hearty)

👉Ingredients:
▶️750g beef shin or braising beef, cut into large chunks, trimmed of fat
▶️2 tbsp plain flour, generously seasoned with salt and pepper
▶️2 tbsp olive oil
▶️1 onion, chopped
▶️2 carrots, diced
▶️2 celery sticks, diced
▶️1 tbsp tomato purée
▶️2 tsp chopped fresh rosemary
▶️400ml beef stock
▶️Mashed potatoes, to serve
▶️Long-stemmed broccoli, to serve
▶️Flat-leaf parsley, chopped, to garnish
👉Method:
↪️Step 1:
Preheat your slow cooker on high. Coat the beef chunks in seasoned flour, shaking off any excess. Heat 1 tbsp olive oil in a large non-stick pan over high heat. Sear the beef in batches until browned on all sides—avoid overcrowding the pan. Transfer each batch to the slow cooker. Repeat with remaining beef and oil.
↪️Step 2:
Once all the beef is in the cooker, add the chopped onion, diced carrots and celery, tomato purée, rosemary, and beef stock. Stir well, cover, and cook on high for 4 hours (or on low for 8 hours) until the meat is tender and the vegetables are soft.

Season to taste. Serve the stew hot in bowls with creamy mashed potatoes and steamed long-stemmed broccoli. Finish with a sprinkle of chopped parsley.
