Slow-Cooked Tomato Braised Beef with Crusty Bread
👉Ingredients:
2 pounds beef chuck roast, cut into large chunks
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
2 cups crushed tomatoes
1/4 cup red wine (optional)
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
1 loaf rustic bread, sliced for serving
👉Directions:
Heat olive oil in a large pot over medium-high heat. Add beef chunks and brown on all sides for about 5-6 minutes. Remove and set aside.
In the same pot, add chopped onions and garlic. Cook for 3-4 minutes until soft and fragrant.
Stir in tomato paste, oregano, thyme, salt, and pepper, cooking for an additional 1-2 minutes.
Add crushed tomatoes and red wine (if using) to the pot, stirring to combine. Return beef to the pot.
Cover the pot and let simmer on low heat for 2-3 hours, or until the beef is tender and the sauce is rich.
Serve hot with slices of rustic bread on the side.
