Slow Cooked Garlic Butter Beef Tips over Mashed Potatoes


👉Ingredients:

- 2 pounds beef stew meat, cut into 1-inch pieces

- 4 tablespoons garlic butter (or 2 tablespoons butter + 4 cloves minced garlic)

- 1 onion, diced

- 2 cups beef broth

- 2 tablespoons soy sauce

- 1 teaspoon Worcestershire sauce

- 1 teaspoon dried thyme

- Salt and pepper, to taste

- 4 large potatoes, peeled and diced

- 1/2 cup milk

- 4 tablespoons butter (for mashed potatoes)

- Fresh parsley, chopped (for garnish)


👉Directions:

1. In a large skillet, heat garlic butter over medium-high heat. Add the beef pieces and sear until browned on all sides. Season with salt and pepper.

2. Transfer the browned beef to a slow cooker. Add the diced onion, beef broth, soy sauce, Worcestershire sauce, and thyme. Stir to combine.

3. Cover and cook on low for 6-8 hours or until the beef is tender.

4. About 30 minutes before the beef is done, prepare the mashed potatoes. Boil the diced potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.

5. Drain the potatoes and return them to the pot. Add the milk and butter, then mash until smooth and creamy. Season with salt and pepper to taste.

6. Serve the garlic butter beef tips over the mashed potatoes, garnished with fresh parsley.
