๐ฒ A hearty, cozy soup packed with tender beef, barley, and veggies – perfect for a filling meal!
⭐ Ingredients
๐น 1 lb beef stew meat, diced
๐น 1 tbsp olive oil
๐น 1 onion, diced
๐น 3 carrots, diced
๐น 2 celery stalks, diced
๐น 3 cloves garlic, minced
๐น 6 cups beef broth
๐น 3/4 cup barley
๐น 2 bay leaves
๐น Salt & black pepper, to taste
๐น Fresh parsley, chopped (for garnish)
๐ฉ๐ณ Directions
๐ Brown the Beef: Heat olive oil in a large pot. Add beef and cook until browned. Remove & set aside.
๐ Sautรฉ Veggies: Add onion, carrots, celery & garlic. Cook 5 minutes until softened.
๐ Simmer the Soup: Return beef. Add broth, barley & bay leaves. Bring to boil ➡️ simmer 45–60 minutes.
๐ Serve & Enjoy: Season with salt & pepper. Garnish with parsley ๐ฟ.
