๐ฅ Ultimate Slow Cooker Pot Roast
๐ A tender, melt-in-your-mouth roast with hearty veggies and rich flavors — pure comfort food!
๐ Ingredients:
๐น 3 lb beef chuck roast
๐น 2 tbsp olive oil
๐น ๐ง Salt & pepper, to taste
๐น ๐ง 4 cloves garlic, minced
๐น ๐ง 1 large onion, sliced
๐น ๐ฅ 4 carrots, chopped
๐น ๐ฅ 3 potatoes, peeled & quartered
๐น ๐ 2 cups beef broth
๐น ๐ท 1 cup red wine (or extra beef broth)
๐น ๐ 2 tbsp tomato paste
๐น ๐ฟ 2 tsp dried thyme
๐น ๐ฟ 2 tsp dried rosemary
๐น ๐ 2 bay leaves
๐น ๐ฅ 1 tbsp Worcestershire sauce
๐ฉ๐ณ Instructions:
1️⃣ Season roast with ๐ง salt & pepper.
2️⃣ Heat olive oil in a skillet → sear roast on all sides until browned. ➡️ Transfer to slow cooker.
3️⃣ Add ๐ง garlic + ๐ง onion to the skillet, sautรฉ until fragrant.
4️⃣ Place ๐ฅ carrots + ๐ฅ potatoes around roast in slow cooker. Top with garlic & onion.
5️⃣ Mix ๐ broth + ๐ tomato paste + ๐ฟ herbs + ๐ bay leaves + ๐ฅ Worcestershire + ๐ท wine. Pour over roast & veggies.
6️⃣ Cover & cook on LOW ⏳ 8–10 hrs, until beef is tender & falling apart.
7️⃣ Remove ๐ bay leaves ➡️ shred beef & serve with veggies & sauce.
๐ Notes:
๐ For thicker gravy: whisk 1 tbsp cornstarch + 1 cup cooking liquid, then stir back in.
๐ Best served with ๐ฅ mashed potatoes or ๐ฅ crusty bread.
