๐ฒ Hearty Tuscan White Bean Soup
A wholesome, cozy soup packed with beans, veggies, and Italian herbs — the perfect bowl for chilly days!
◾️ Ingredients
๐น️1 tbsp olive oil (or cooking spray for lighter version)
๐น️1 onion, chopped ๐ง
๐น️2 garlic cloves, minced ๐ง
๐น️2 carrots, diced ๐ฅ
๐น️2 celery stalks, diced ๐ฟ
๐น️1 can (14.5 oz) diced tomatoes (no added salt) ๐
๐น️1 can (15 oz) white beans, drained & rinsed (cannellini or great northern) ๐ซ
๐น️4 cups low-sodium vegetable or chicken broth ๐ฒ
๐น️2 cups chopped kale or spinach ๐ฅฌ
๐น️1 tsp dried basil ๐ฑ
๐น️1 tsp dried oregano ๐ฟ
๐น️1/2 tsp dried thyme ๐ผ
๐น️Salt & pepper to taste ๐ง
๐น️1 bay leaf (optional) ๐
๐ Instructions
1️⃣ Sautรฉ Vegetables
In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
2️⃣ Add Tomatoes & Beans
Stir in diced tomatoes and white beans. Mix well.
3️⃣ Pour in Broth & Season
Add broth, basil, oregano, thyme, salt, pepper, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.
4️⃣ Add Greens
Stir in kale or spinach and simmer another 5 minutes, until wilted and tender.
5️⃣ Serve & Enjoy
Remove bay leaf. Ladle into bowls and serve warm with crusty bread! ๐ฅ✨
