A wholesome, cozy soup packed with beans, veggies, and Italian herbs — the perfect bowl for chilly days!


◾️ Ingredients

๐Ÿ”น️1 tbsp olive oil (or cooking spray for lighter version)

๐Ÿ”น️1 onion, chopped ๐Ÿง…

๐Ÿ”น️2 garlic cloves, minced ๐Ÿง„

๐Ÿ”น️2 carrots, diced ๐Ÿฅ•

๐Ÿ”น️2 celery stalks, diced ๐ŸŒฟ

๐Ÿ”น️1 can (14.5 oz) diced tomatoes (no added salt) ๐Ÿ…

๐Ÿ”น️1 can (15 oz) white beans, drained & rinsed (cannellini or great northern) ๐Ÿซ˜

๐Ÿ”น️4 cups low-sodium vegetable or chicken broth ๐Ÿฒ

๐Ÿ”น️2 cups chopped kale or spinach ๐Ÿฅฌ

๐Ÿ”น️1 tsp dried basil ๐ŸŒฑ

๐Ÿ”น️1 tsp dried oregano ๐ŸŒฟ

๐Ÿ”น️1/2 tsp dried thyme ๐ŸŒผ

๐Ÿ”น️Salt & pepper to taste ๐Ÿง‚

๐Ÿ”น️1 bay leaf (optional) ๐Ÿƒ


๐Ÿ‘‰ Instructions

1️⃣ Sautรฉ Vegetables

In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.


2️⃣ Add Tomatoes & Beans

Stir in diced tomatoes and white beans. Mix well.


3️⃣ Pour in Broth & Season

Add broth, basil, oregano, thyme, salt, pepper, and bay leaf. Bring to a boil, then reduce heat and simmer for 20 minutes.


4️⃣ Add Greens

Stir in kale or spinach and simmer another 5 minutes, until wilted and tender.


5️⃣ Serve & Enjoy

Remove bay leaf. Ladle into bowls and serve warm with crusty bread! ๐Ÿฅ–✨
