Slow Cooker Chicken Thighs with Corn and Potatoes
👉Ingredients
4 bone-in chicken thighs, skin removed
4 medium potatoes, peeled and diced
2 cups frozen corn
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chicken broth
Fresh parsley, chopped for garnish
👉Directions
✅️1. Place the diced potatoes, chopped onions, and minced garlic in the bottom of the slow cooker.
✅️2. Season the chicken thighs with salt, pepper, paprika, and thyme, then lay them on top of the vegetables.
✅️3. Scatter the frozen corn around the chicken.
✅️4. Pour the chicken broth over the ingredients in the slow cooker.
✅️5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
✅️6. Garnish with fresh parsley before serving.
