Slow Cooker Beef Stew 🍲 

A cozy and comforting stew made with tender beef and hearty vegetables—perfect for chilly days! 😋

👉Ingredients:


1/4 cup all-purpose flour

2 teaspoons dried thyme

1 1/2 teaspoons kosher salt, plus more as needed

1 teaspoon freshly ground black pepper, plus more for serving

1 teaspoon garlic powder

1 medium yellow onion, chopped

4 medium carrots, peeled and chopped

2 medium stalks celery, chopped

1 pound Yukon gold or red potatoes (about 3 medium), chopped

2 1/4 pounds boneless beef chuck roast or beef stew meat, cut into 1-inch pieces

2 dried bay leaves

1 1/2 cups beef broth

1 tablespoon tomato paste

Chopped fresh parsley leaves, for serving (optional)

👉Directions:


1️⃣ Prepare the Meat & Vegetables:


In a large bowl, combine flour, thyme, salt, pepper, and garlic powder.

Add beef pieces to the bowl and toss to coat the meat evenly with the flour mixture.

2️⃣ Assemble the Stew:


Place the coated beef, chopped onion, carrots, celery, and potatoes into the slow cooker.

Add bay leaves, beef broth, tomato paste .

Stir to combine all ingredients well.

3️⃣ Cook the Stew:


Cover the slow cooker and cook on low for 7-8 hours, or until the beef is tender and the vegetables are cooked through.

Taste and adjust seasoning with more salt and pepper as needed.

4️⃣ Serve:


Remove bay leaves before serving. Garnish with chopped fresh parsley for an added touch of freshness.
