🔥Grilled Surf & Turf Deluxe


👉Ingredients:

1 lb beef tenderloin (cut into 1-inch medallions)

1 lb large shrimp (peeled and deveined)

2 large red bell peppers (cut into large chunks)

1 large red onion (cut into wedges)

1/4 cup olive oil

3 garlic cloves (minced)

2 tbsp fresh parsley (chopped)

1 tbsp fresh rosemary (chopped)

1 tsp smoked paprika

1 tsp salt (divided)

1/2 tsp black pepper (divided)

1 lemon (cut into wedges for serving)

👉Instructions:


In a small bowl, mix olive oil, minced garlic, parsley, rosemary, smoked paprika, 1/2 tsp salt, and 1/4 tsp black pepper to make a marinade.

Divide the marinade into two portions; toss beef medallions in one half and shrimp in the other half. Let marinate for 30 minutes at room temperature.

Preheat grill to medium-high heat (about 400°F/200°C).

Thread shrimp, bell peppers, and red onion onto skewers (if using wooden skewers, soak them in water for 30 minutes prior to grilling).

Season beef medallions, shrimp skewers, and vegetables with remaining 1/2 tsp salt and 1/4 tsp black pepper.

Grill beef medallions for 3-4 minutes per side for medium-rare, or longer to desired doneness; grill shrimp skewers for 2-3 minutes per side until pink and opaque; grill vegetables until charred and tender, about 5 minutes.

Arrange everything on a platter, garnish with extra parsley, and serve with lemon wedges on the side.

Prep Time: 15 minutes (plus 30 minutes marinating)
