๐ฒ Slow Cooker Chicken Stew
A hearty, creamy, and flavorful stew made with chicken, veggies, and herbs—perfect for a cozy meal!
✅ Ingredients:
๐น️ 2 tbsp olive oil
๐น️ 1 ½ lbs chicken thighs (boneless, skinless, cut into 1-inch pieces)
๐น️ 3 tbsp all-purpose flour
๐น️ 1 tsp dried thyme
๐น️ 1 tsp dried rosemary
๐น️ ½ tsp salt (+ more to taste)
๐น️ 6 cloves garlic, minced
๐น️ 1 onion, diced
๐น️ 3 carrots, sliced
๐น️ 2 large potatoes, cubed
๐น️ 3 cups chicken broth
๐น️ 1 bay leaf
๐น️ ½ cup milk
๐น️ 1 cup frozen green peas
๐น️ Black pepper, to taste
✅ Instructions:
▶️ Step 1 – Prepare Chicken
◾️ Dice chicken into 1-inch cubes, season with salt & pepper.
◾️ Heat olive oil in a skillet and sear chicken until golden (about 4–5 minutes).
▶️ Step 2 – Build the Base
◾️ Transfer chicken to the slow cooker.
◾️ Toss with flour, thyme, rosemary, and salt until well coated.
▶️ Step 3 – Add Veggies & Broth
◾️ Stir in garlic, onion, carrots, and potatoes.
◾️ Pour in chicken broth and add the bay leaf.
▶️ Step 4 – Slow Cook
◾️ Cover and cook on LOW for 7–8 hours or HIGH for 3–4 hours.
▶️ Step 5 – Finish the Stew
◾️ Stir in peas and milk during the last 10–15 minutes.
◾️ Adjust thickness by adding flour (if too thin) or broth (if too thick).
▶️ Step 6 – Serve & Enjoy
◾️ Taste, adjust seasoning, and serve hot with crusty bread.
