Slow-Roasted Beef & Vegetables

✨ A vibrant and flavorful dish combining the ease of a stir-fry with the comfort of creamy Italian flavors. Juicy garlic & herb chicken, sautรฉed mushrooms, and colorful veggies meet crispy garlic-parmesan roasted potatoes — all topped with a rich Alfredo sauce and gooey melted mozzarella.


๐Ÿงพ Ingredients (Serves 2–3)

◾️๐Ÿ” Garlic & Herb Chicken with Veggies

◾️1 lb boneless, skinless chicken breasts, cut into strips

◾️1 tbsp olive oil ๐Ÿซ’

◾️3 cloves garlic, minced ๐Ÿง„

◾️1 tsp dried oregano ๐ŸŒฟ

◾️1 tsp dried basil ๐ŸŒฟ

◾️½ tsp dried thyme ๐ŸŒฟ

◾️8 oz cremini mushrooms, sliced ๐Ÿ„

◾️1 red bell pepper, sliced ๐ŸŒถ️

◾️1 zucchini, sliced ๐Ÿฅ’

◾️Salt & black pepper ๐Ÿง‚ to taste

◾️ Crispy Garlic-Parmesan Roasted Potatoes

◾️2 medium Yukon Gold potatoes, cubed (½-inch) ๐Ÿฅ”

◾️2 tbsp olive oil ๐Ÿซ’

◾️2 cloves garlic, minced ๐Ÿง„

◾️¼ cup grated Parmesan ๐Ÿง€

◾️½ tsp dried oregano ๐ŸŒฟ

◾️Salt & black pepper ๐Ÿง‚ to taste

◾️ Creamy Sun-Dried Tomato Mushroom Alfredo

◾️2 tbsp butter ๐Ÿงˆ

◾️4 oz cremini mushrooms, sliced ๐Ÿ„

◾️¼ cup sun-dried tomatoes (oil-packed), drained & chopped ๐Ÿ…

◾️2 cloves garlic, minced ๐Ÿง„

◾️1½ cups heavy cream ๐Ÿฅ›

◾️½ cup grated Parmesan ๐Ÿง€

◾️½ cup shredded mozzarella ๐Ÿง€

◾️Salt & black pepper ๐Ÿง‚ to taste


๐Ÿ”ฅ Instructions:

1️⃣ Sautรฉ the Chicken & Veggies

In a large skillet or wok, heat olive oil over medium-high heat. Add chicken, garlic, oregano, basil, thyme, salt, and pepper. Cook until browned and cooked through. Add mushrooms, bell pepper, and zucchini. Stir-fry until tender-crisp. Remove and set aside.


2️⃣ Roast the Potatoes

Preheat oven to 400°F (200°C). Toss potato cubes with olive oil, garlic, Parmesan, oregano, salt, and pepper. Spread on a baking sheet and roast 20–25 min, flipping halfway, until golden and crispy.


3️⃣ Make the Creamy Sauce

In the same skillet (or a clean one), melt butter over medium heat. Add mushrooms and garlic; cook until softened. Stir in sun-dried tomatoes. Pour in cream, bring to a gentle simmer, and stir in Parmesan until smooth. Season with salt and pepper.


4️⃣ Add Mozzarella & Combine

Return chicken and veggies to the skillet. Stir to coat in the Alfredo sauce. Sprinkle mozzarella over top, cover, and let melt until gooey.


5️⃣ Serve & Enjoy

Plate the crispy potatoes, spoon the creamy chicken stir-fry over top, and serve immediately. ✨
