Slow Cooker Peach Mango Salsa



🍑 Slow Cooker Peach Mango Salsa Chicken (Easy & Flavorful!)


👉Ingredients:

◾️4 chicken thighs (seasoned with salt, pepper, garlic powder, onion powder)

◾️1 can black beans (drained & rinsed)

◾️1 jar Herr's peach mango salsa

◾️1 can Rotel diced tomatoes with green chilis

◾️½ bag frozen corn (or about 1 cup)

◾️1 tsp chili powder

◾️1 tsp unsweetened cocoa powder


👉Instructions:

✅️1. Place the seasoned chicken thighs in the bottom of your slow cooker.

✅️2. Add black beans, salsa, Rotel, frozen corn, chili powder, and cocoa powder on top.

✅️3. Cover and cook on low for 4 hours.

✅️4. At 3½ hours, check the chicken. If fully cooked, remove thighs, discard skin and bones, shred the meat, and return it to the slow cooker. Let it soak in the sauce for the final 30 minutes.


👉 Tips for Success:

↪️1. Sear the chicken first (optional): For deeper flavor, quickly brown the thighs in a skillet before slow cooking.

↪️2. Use fresh onion if you can: A sautéed onion adds more depth. Add it with the beans and salsa if available.

↪️3. Adjust spice to taste: If you like it hotter, add a pinch of cayenne or extra chili flakes.

↪️4. Serve it right: Spoon over rice, stuff into tacos, or enjoy with tortilla chips and cheese for a hearty meal.
