Slow Cooker Amish-Style Beef & Barley Soup
👉Ingredients:
↪️1.5 lbs beef stew meat, cut into 1-inch cubes
↪️1 tbsp vegetable oil
↪️1 medium onion, chopped
↪️2 carrots, sliced
↪️2 celery stalks, sliced
↪️3 garlic cloves, minced
↪️1 cup pearl barley
↪️8 cups beef broth
↪️1 tsp dried thyme
↪️1 bay leaf
↪️Salt and black pepper to taste
↪️2 tbsp chopped fresh parsley (optional)
👉Instructions:
✅️1. Brown the Beef:
Heat the vegetable oil in a large skillet over medium-high heat. Add the beef cubes and cook until browned on all sides. Transfer the beef to your slow cooker.
✅️2. Sauté the Veggies:
In the same skillet, add the chopped onion, carrots, celery, and garlic. Cook for about 5 minutes until they start to soften. Add them to the slow cooker.
✅️3. Add Remaining Ingredients:
Stir in the barley, beef broth, dried thyme, and bay leaf.
✅️4. Cook Low and Slow:
Cover and cook on low for 6 to 8 hours, until the beef is tender and the barley is fully cooked.
✅️5. Finish It Off:
Discard the bay leaf. Season with salt and pepper to your liking. Stir in the parsley if using.
✅️6. Serve Hot:
Ladle the soup into bowls and enjoy a warm, hearty meal!
