Cheese, Potato & Smoked Sausage Casserole 😋
👉Ingredients:
3 cups Russet potatoes, peeled and cubed, boiled until tender but not mushy
1 lb smoked sausage, thinly sliced
4 tbsp butter
4 tbsp flour
2 cups half & half or milk
Salt and pepper to taste
1/2 lb Velveeta cheese, cubed
1/2 cup shredded sharp cheddar cheese
1/4 tsp smoked paprika
👉Instructions:
✅️1. Cook the Sausage:
In a large skillet over medium-low heat, add 1–2 tablespoons of olive oil and cook the sliced sausage. Flip and stir until the sausage is lightly browned.
✅️2. Prepare the Casserole Base:
Lightly grease a 9×13 inch baking dish. Add the cooked potatoes and browned sausage to the dish. Stir gently to mix them evenly.
✅️3. Make the Cheese Sauce:
In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute to get rid of the raw flour taste.
Gradually whisk in the half & half (or milk), about 1/4 to 1/2 cup at a time, until fully combined and thickened.
Add the Velveeta cheese, paprika, salt, and pepper. Stir until the cheese is completely melted and the sauce is smooth.
✅️4. Assemble and Bake:
Pour the cheese sauce evenly over the potatoes and sausage in the baking dish. Sprinkle the shredded cheddar cheese on top.
Bake at 350°F (175°C) for 35–45 minutes, or until the casserole is golden and bubbly and the potatoes are tender.
