Slow-Cooked Lamb Shanks with Herb-Infused Gravy
👉Ingredients:
- 4 lamb shanks
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cups beef or vegetable broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- Salt and pepper to taste
- 2 bay leaves
- Fresh parsley for garnish
👉Directions:
✅️1. Heat the olive oil in a large skillet over medium-high heat. Brown the lamb shanks on all sides. Remove them from the skillet and set aside.
✅️2. In the same skillet, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they are softened.
✅️3. Add the minced garlic and cook for another minute until fragrant.
✅️4. Stir in the tomato paste, red wine, broth, thyme, rosemary, salt, pepper, and bay leaves. Bring the mixture to a simmer.
✅️5. Place the browned lamb shanks in a slow cooker. Pour the vegetable and wine mixture over the shanks.
✅️6. Cover and cook on low for 6 to 8 hours, or until the lamb is tender and falls off the bone.
✅️7. Once cooked, remove the lamb shanks from the slow cooker and set them aside. Discard the bay leaves.
✅️8. If you want a thicker gravy, you can transfer the cooking liquid to a saucepan and simmer it on the stove until it thickens.
