Hearty Slow-Cooked Ground Beef and Fresh Vegetable Soup
👉Ingredients:
1 lb ground beef
3 carrots, peeled and diced
2 celery stalks, diced
1 large onion, chopped
3 cloves garlic, minced
1 zucchini, diced
1 cup green beans, trimmed and cut
1 can (14.5 oz) diced tomatoes
4 cups beef broth
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper, to taste
2 tablespoons olive oil
Fresh parsley, chopped (for garnish)
👉Directions:
In a skillet over medium heat, heat olive oil and brown the ground beef until fully cooked. Drain excess fat.
Transfer browned beef to the slow cooker.
Add carrots, celery, onion, garlic, zucchini, green beans, diced tomatoes, beef broth, thyme, oregano, salt, and pepper to the slow cooker. Stir to combine.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until vegetables are tender and flavors meld.
Taste and adjust seasoning as needed.
Serve hot, garnished with fresh parsley.
