2 lbs beef chuck, cut into 1-inch cubes
2 tbsp olive oil
1 large onion, chopped
3 garlic cloves, minced
3 carrots, peeled and cut into chunks
3-4 small potatoes, halved
2 tbsp tomato paste
4 cups beef broth
1 cup red wine (optional)
1 tbsp Worcestershire sauce
2 tsp fresh thyme (or 1 tsp dried)
2 bay leaves
Salt and pepper, to taste
Fresh parsley for garnish (optional)
Directions 👨🍳:
↪️Sear the Beef: Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear on all sides until browned. Remove and set aside.
↪️Sauté the Aromatics: In the same pot, add the onions and garlic. Cook until softened, about 5 minutes. Stir in the tomato paste and cook for another minute.
↪️Deglaze: Pour in the red wine (if using) and beef broth, scraping up any browned bits from the bottom. Add the Worcestershire sauce, thyme, and bay leaves.
↪️Cook the Stew: Return the beef to the pot. Add the carrots and potatoes. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
↪️Serve: Taste and adjust seasoning. Serve hot, garnished with fresh parsley, alongside mashed potatoes or crusty bread.
