๐ธ️1 can (14 oz) diced tomatoes

๐ธ️2 bay leaves
๐ธ️1 cup green olives (sliced or whole)

๐ธ️1 tbsp apple cider vinegar or lime juice
๐ธ️Salt & black pepper
๐ธ️2 tbsp chopped fresh cilantro (for serving)

๐จ1. Sear the Beef: In a large pot, heat olive oil over medium-high heat. Brown the beef on all sides (about 5–7 minutes), then take it out and set aside.
๐จ2. Cook Veggies: In the same pot, cook onion and bell peppers until soft (about 7–10 minutes).
๐จ3. Add Garlic & Spices: Stir in garlic, tomato paste, cumin, paprika, allspice, and cloves. Cook for 1 minute.
๐จ4. Simmer: Pour in the broth, diced tomatoes, oregano, and bay leaves. Return the beef to the pot. Bring to a boil, then lower heat and cover. Let simmer for 2 hours until the beef is very tender.
๐จ5. Shred & Finish: Shred the beef with two forks. Add it back into the sauce with olives and capers. Let cook for another 5 minutes.
๐จ6. Add Final Touches: Stir in vinegar or lime juice. Taste and season with salt and pepper. Garnish with fresh cilantro.
