Cowboy Meatloaf and Potatoes Casserole



✅️✅️ Cowboy Meatloaf & Potatoes Casserole (Short & Easy!)


👉Ingredients:

▶️Meatloaf Layer:

1 lb ground beef, ½ cup breadcrumbs, ¼ cup chopped onion, ¼ cup milk, 1 egg, 2 tbsp Worcestershire sauce, 1 tsp garlic powder, salt & pepper.


▶️Potato Topping:

4 russet potatoes (cubed), ¼ cup butter, ½ cup milk, 1 cup shredded cheddar, salt & pepper.


▶️Final Toppings:

½ cup cooked, crumbled bacon, ¼ cup chopped green onions.


👉Instructions:

✅️1. Preheat oven to 375°F (190°C). Grease a 9x13 dish.

✅️2. Meatloaf Base: Mix all meatloaf ingredients and press into dish. Bake for 20 min.

✅️3. Mashed Potatoes: Boil potatoes until soft. Mash with butter & milk. Season well.

✅️4. Assemble: Spread mashed potatoes on meatloaf. Top with cheese, bacon & green onions.

✅️5. Bake for another 15–20 min. Let rest 5 min before serving.
