👉Ingredients:
◾️1.5 lbs (680g) sirloin or ribeye steak, cut into 1-inch cubes
◾️1.5 lbs (680g) baby potatoes, cut into bite-sized pieces
◾️2 tbsp olive oil, divided
◾️1 tsp salt, divided
◾️1 tsp black pepper, divided
◾️1 tsp garlic powder
◾️1 tsp smoked paprika
◾️1 tsp dried thyme
◾️1 tsp dried rosemary
◾️1 small onion, diced
◾️3 garlic cloves, minced
◾️1/4 cup beef broth
◾️2 tbsp unsalted butter
◾️2 tbsp fresh parsley, chopped (for garnish)
👉Instructions:
✅️1:Prepare the Potatoes:
◾️In a large skillet, heat 1 tbsp olive oil over medium heat. Add the potato pieces, season with 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp garlic powder.
◾️Cook, stirring occasionally, for 10-12 minutes until the potatoes are golden and fork-tender. Remove the potatoes from the skillet and set aside.
✅️2. Cook the Steak:
◾️In the same skillet, add the remaining 1 tbsp olive oil and increase the heat to medium-high.
◾️Season the steak cubes with the remaining 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder, smoked paprika, thyme, and rosemary.
◾️Add the steak to the skillet in a single layer (work in batches if needed). Sear for 2-3 minutes per side until browned and cooked to your desired doneness (135°F/57°C for medium-rare). Remove the steak and set aside with the potatoes.
✅️3. Make the Pan Sauce:
◾️In the same skillet, reduce the heat to medium. Add the diced onion and cook for 2-3 minutes until softened.
◾️Add the minced garlic and cook for 30 seconds until fragrant.
◾️Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for 1-2 minutes.
◾️Stir in the butter until melted and the sauce is slightly thickened.
✅️4. Combine and Serve:
◾️Return the steak and potatoes to the skillet, tossing them in the sauce to coat evenly. Cook for 1-2 minutes to heat through.
◾️Garnish with chopped parsley and serve directly from the skillet.
👉Notes:
🔸️For extra flavor, add a splash of Worcestershire sauce or soy sauce to the pan sauce.
🔸️You can substitute the baby potatoes with Yukon Gold or red potatoes if preferred.
