▶️1 small onion, finely chopped
▶️4 garlic cloves, minced
▶️1 (14 oz) can diced tomatoes
▶️1 tablespoon tomato paste
▶️1 teaspoon dried oregano
▶️¼ teaspoon red pepper flakes (optional)
▶️1 teaspoon sugar
▶️½ cup cherry tomatoes, halved (optional)
▶️¼ cup fresh basil, chopped
▶️Salt and black pepper, to taste
👉Instructions:
✅️1. Season the Cod:
◾️Sprinkle the fillets with salt, pepper, garlic powder, and paprika.
✅️2. Sear the Fish:
◾️Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear the cod for 3–4 minutes per side, or until golden and cooked through. Remove and set aside.
✅️3. Make the Sauce:
In the same skillet, add 1 tablespoon olive oil. Sauté the chopped onion for 2–3 minutes until softened. Stir in the garlic and cook for another minute.
✅️4. Simmer:
◾️Add the diced tomatoes, tomato paste, oregano, red pepper flakes (if using), and sugar. Let it simmer for 7–8 minutes until slightly thickened. Add the cherry tomatoes if you like.
✅️5. Finish the Sauce:
◾️Season with salt and pepper to taste, then stir in the fresh basil.
✅️6. Combine and Serve:
◾️Return the seared cod fillets to the pan, spoon the sauce over them, and let simmer together for 2 minutes to blend the flavors.
