Slow Cooker Beef Bourguignon



👉Ingredients:

▶️5 slices bacon, finely chopped

▶️3 lbs boneless beef chuck, cut into 1-inch cubes

▶️1 cup red cooking wine

▶️2 cups chicken broth

▶️1/2 cup tomato sauce

▶️1/4 cup soy sauce

▶️1/4 cup flour

▶️3 garlic cloves, finely chopped

▶️3 teaspoons thyme, finely chopped

▶️5 medium carrots, sliced

▶️1 lb baby potatoes (tri-color if available)

▶️8 oz fresh mushrooms, sliced

▶️Fresh chopped parsley, for garnish


👉Instructions:

✅️1. In a large skillet, cook the bacon over medium-high heat until crispy. Transfer to the slow cooker.


✅️2. Season the beef with salt and pepper. Sear it in the same skillet for 2–3 minutes per side, then transfer to the slow cooker.


✅️3. Deglaze the skillet with red wine, scraping up the browned bits. Let it simmer briefly, then stir in the chicken broth, tomato sauce, and soy sauce.


✅️4. Gradually whisk in the flour until smooth. Pour the sauce over the beef in the slow cooker.


✅️5. Add garlic, 3 tsp thyme, carrots, potatoes, and mushrooms. Stir to combine.


✅️6. Cover and cook:

◾️Low: 8–10 hours

◾️High: 6 hours


✅️7. Garnish with chopped parsley before serving. Delicious with mashed potatoes!
