Crockpot French Onion Meatloaf with Melted Swiss Cheese ๐ง ๐ง๐ฅ
Slow-cooked to perfection, this rich and juicy meatloaf is packed with caramelized onion flavor and topped with gooey melted Swiss cheese. A comforting, melt-in-your-mouth dish!
๐Ingredients:
๐ฅฉ For the Meatloaf:
• 2 lbs ground beef
• 1 cup crushed pork rinds (or almond flour for low-carb)
• 1 packet (or 3 tbsp) French onion soup mix
• 1/2 cup grated Parmesan cheese
• 2 eggs
• 1/4 cup heavy cream
• 1/2 cup shredded Swiss cheese (for inside)
๐ง For the Onion Topping:
• 2 large onions, thinly sliced
• 3 tbsp butter
• 1/2 cup beef broth
• 1 tsp Worcestershire sauce
๐ง For the Finishing Touch:
• 6 slices Swiss cheese
๐Instructions:
1️⃣ Caramelize the onions – In a pan, sautรฉ onions in butter over medium-low heat until golden and soft. Add beef broth and Worcestershire sauce, then simmer for 5 minutes.
2️⃣ Prepare the meatloaf – In a bowl, mix ground beef, soup mix, pork rinds, Parmesan, eggs, heavy cream, and shredded Swiss cheese. Form into a loaf.
3️⃣ Slow cook – Place the meatloaf in the crockpot, top with caramelized onions, and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
4️⃣ Melt the cheese – In the last 10 minutes, lay Swiss cheese slices over the meatloaf, cover, and let it melt.
