🔹️A classic pot roast is a cozy, satisfying dish made with tender beef, flavorful vegetables, and a rich, savory broth. It's perfect for a family dinner or a relaxing weekend meal. Here’s an easy way to make it:
👉Ingredients:
↪️3–4 lbs (1.5–2 kg) beef chuck roast or round roast
↪️2 tablespoons olive oil
↪️Salt and pepper, to taste
↪️1 large onion, chopped
↪️3–4 garlic cloves, minced
↪️4 medium carrots, peeled and cut into large pieces
↪️4 medium potatoes, peeled and chopped (or use turnips/cauliflower for a keto version)
↪️2 celery stalks, sliced
↪️2 cups beef broth (add more if needed)
↪️1 cup dry red wine (optional, or just use more broth)
↪️2 tablespoons tomato paste
↪️2 teaspoons dried thyme or a few sprigs of fresh thyme
↪️2 teaspoons dried rosemary or 1 fresh sprig
↪️2 bay leaves
↪️1 tablespoon Worcestershire sauce (optional)
↪️1 tablespoon soy sauce (optional)
👉Instructions:
✅️1. Sear the Meat:
Heat the olive oil in a large pot over medium-high heat. Season the beef with salt and pepper, then sear it on all sides until nicely browned. Remove the meat and set aside.
✅️2. Sauté the Aromatics:
In the same pot, cook the chopped onion and garlic until soft and fragrant.
✅️3. Deglaze the Pot:
Pour in the wine (if using) and scrape up any browned bits from the bottom. This adds a lot of flavor.
✅️4. Add Liquids & Herbs:
Stir in the beef broth, tomato paste, Worcestershire sauce, soy sauce, thyme, rosemary, and bay leaves.
✅️5. Return the Roast:
Place the seared meat back into the pot. The liquid should come up about halfway on the roast. Add more broth if needed.
✅️6. Slow Cook:
Cover the pot with a lid and place it in a 300°F (150°C) oven. Let it cook for 3–4 hours, or until the meat is very tender. After 2 hours, add the carrots, potatoes, and celery so they don’t overcook.

When done, take the pot out of the oven. Let the roast rest for 10–15 minutes before slicing. Remove the bay leaves and herb stems.
