Old School Pineapple Pound Cake


👉Ingredients:


✅️For the Cake:

◾️3 cups all-purpose flour

◾️3 cups granulated sugar

◾️6 large eggs

◾️1 cup unsalted butter (2 sticks), softened

◾️½ cup vegetable oil

◾️1 tsp baking powder

◾️½ tsp salt

◾️1 cup crushed pineapple (with juice)

◾️1 tsp vanilla extract

◾️1 tsp pineapple or lemon extract (optional)


✅️For the Pineapple Glaze:

◾️1 ½ cups powdered sugar

◾️2–3 tbsp pineapple juice (from the can or fresh)

◾️1 tsp vanilla or pineapple extract (optional)


👉Instructions:

✅️To make the Cake:

◾️1. Preheat your oven to 325°F (163°C). Grease and flour a 10-inch bundt or tube pan very well.

◾️2. In a large mixing bowl, beat the butter, sugar, and oil together until light and fluffy (about 4–5 minutes).

◾️3. Add the eggs one at a time, mixing well after each addition.

◾️4. Stir in the vanilla extract and optional pineapple or lemon extract.

◾️5. In another bowl, whisk together the flour, baking powder, and salt.

◾️6. Gradually add the dry ingredients and crushed pineapple (with juice) to the butter mixture, starting and ending with the flour. Mix just until combined.

◾️7. Pour the batter into the prepared pan and smooth the top.

◾️8. Bake for 1 hour to 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean.

◾️9. Let the cake cool in the pan for 15 minutes, then carefully remove it and let it cool completely on a wire rack or cake plate.

👉To make the Glaze:

🔸️1. In a small bowl, whisk the powdered sugar and pineapple juice until smooth. Add more juice if needed for a pourable consistency.

🔸️2. Add vanilla or pineapple extract, if using.

🔸️3. Drizzle over the cooled cake and let it set before slicing.
