One-Pot Smoky Cheddar Ranch Chicken & Sausage Pasta
👉Ingredients:
◾️1 lb chicken breast, cut into bite-sized pieces
◾️1 lb smoked sausage (like andouille or kielbasa), sliced
◾️12 oz penne or rotini pasta
◾️4 cups chicken broth
◾️1 cup heavy cream
◾️1 cup shredded cheddar cheese
◾️1 packet ranch seasoning mix (or 2 tbsp homemade)
◾️1 tbsp olive oil or butter
◾️Salt and black pepper to taste
◾️Optional: chopped parsley or green onions for garnish
👉Instructions:
🔸️1. Cook the meats:
◾️In a large pot or deep skillet, heat the olive oil or butter over medium-high heat.
◾️Add the diced chicken, season with salt and pepper, and cook for 4–5 minutes until lightly browned.
◾️Add the sliced sausage and cook for another 3–4 minutes, until the sausage is browned and the chicken is cooked through. Drain excess grease if needed.
🔸️2. Add pasta and liquids:
◾️Stir in the ranch seasoning, dry pasta, chicken broth, and heavy cream.
◾️Mix well and bring to a gentle boil.
🔸️3. Simmer:
◾️Reduce heat to medium-low. Cover and let it simmer for 12–15 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.
◾️Add a bit more broth or water if it gets too thick.
🔸️4. Add the cheese:
◾️Stir in the shredded cheddar cheese until melted and the sauce is smooth and creamy.
◾️Taste and adjust seasoning if needed.
🔸️5. Serve:
Let it rest for a couple of minutes before serving. Garnish with parsley or green onions if desired.
👉Tip:
This dish is rich, comforting, and perfect for busy weeknights. Serve it with a side salad or some crusty bread if you like!
