๐๐ฅ Pot Roast over Creamy Mashed Potatoes ✨๐ด
๐ Ingredients
➡️ For the Roast:
๐ฅฉ 3–4 lbs beef chuck roast
๐ซ 1 tbsp olive oil
๐ง 1 onion, chopped
๐ง 4 garlic cloves, minced
๐ฅฃ 4 cups beef broth
๐ฅ 2 cups carrots, chopped
๐ฅ 2 cups potatoes, chopped (for roast)
๐ฟ 1 tsp thyme
๐ฟ 1 tsp rosemary
๐ง Salt & pepper, to taste
➡️ For the Mashed Potatoes:
๐ฅ 4 large potatoes
๐ฅ ½ cup milk
๐ง ¼ cup butter
๐ง Salt & pepper, to taste
๐ฉ๐ณ Instructions:
1️⃣ In a large pot, heat ๐ซ olive oil over medium-high heat. Season ๐ฅฉ roast with ๐ง salt & pepper, then sear on all sides until browned.
2️⃣ Add ๐ง onion + ๐ง garlic, cook until fragrant.
3️⃣ Pour in ๐ฅฃ beef broth, then add ๐ฅ carrots, ๐ฅ potatoes, ๐ฟ thyme & rosemary. Stir well.
4️⃣ Cover and simmer on ๐ฅ low heat for 3–4 hours until fork-tender.
5️⃣ Meanwhile, peel & chop ๐ฅ potatoes for mashing. Boil in salted water until tender, then drain.
6️⃣ Mash with ๐ง butter + ๐ฅ milk + ๐ง salt & pepper until creamy.
7️⃣ Serve the juicy ๐ roast over fluffy ๐ฅ mashed potatoes — pure comfort food! ❤️
