Savory Beef Roast over Buttery Mashed Potatoes

➡️ For the Roast:


๐Ÿฅฉ 3–4 lbs beef chuck roast


๐Ÿซ’ 1 tbsp olive oil


๐Ÿง… 1 onion, chopped


๐Ÿง„ 4 garlic cloves, minced


๐Ÿฅฃ 4 cups beef broth


๐Ÿฅ• 2 cups carrots, chopped


๐Ÿฅ” 2 cups potatoes, chopped (for roast)


๐ŸŒฟ 1 tsp thyme


๐ŸŒฟ 1 tsp rosemary


๐Ÿง‚ Salt & pepper, to taste



➡️ For the Mashed Potatoes:


๐Ÿฅ” 4 large potatoes


๐Ÿฅ› ½ cup milk


๐Ÿงˆ ¼ cup butter


๐Ÿง‚ Salt & pepper, to taste



๐Ÿ‘ฉ‍๐Ÿณ Instructions:

1️⃣ In a large pot, heat ๐Ÿซ’ olive oil over medium-high heat. Season ๐Ÿฅฉ roast with ๐Ÿง‚ salt & pepper, then sear on all sides until browned.


2️⃣ Add ๐Ÿง… onion + ๐Ÿง„ garlic, cook until fragrant.


3️⃣ Pour in ๐Ÿฅฃ beef broth, then add ๐Ÿฅ• carrots, ๐Ÿฅ” potatoes, ๐ŸŒฟ thyme & rosemary. Stir well.


4️⃣ Cover and simmer on ๐Ÿ”ฅ low heat for 3–4 hours until fork-tender.


5️⃣ Meanwhile, peel & chop ๐Ÿฅ” potatoes for mashing. Boil in salted water until tender, then drain.


6️⃣ Mash with ๐Ÿงˆ butter + ๐Ÿฅ› milk + ๐Ÿง‚ salt & pepper until creamy.
