๐ฅ Grilled Chicken Greek Salad with Tzatziki
✅ Ingredients
➡️For the Chicken:
2 chicken breasts (or thighs) ๐
2 tbsp olive oil ๐ซ
Juice of 1 lemon ๐
2 garlic cloves, minced ๐ง
1 tsp oregano ๐ฟ
Salt & pepper
➡️For the Salad:
Romaine or mixed greens ๐ฅฌ
Cherry tomatoes ๐
Cucumber ๐ฅ
Red onion ๐ง
Kalamata olives ๐ซ
Feta cheese ๐ง
➡️For the Tzatziki:
1 cup Greek yogurt ๐ฅ
½ cucumber, grated & drained ๐ฅ
1 garlic clove, minced ๐ง
1 tbsp lemon juice ๐
1 tbsp dill or mint ๐ฟ
Salt & pepper
๐น Instructions:
1. Marinate & Grill Chicken ๐ Mix olive oil, lemon, garlic, oregano, salt & pepper. Marinate chicken 30 min, then grill 5–6 min per side until cooked. Rest & slice.
2. Make Tzatziki ๐ Mix yogurt, cucumber, garlic, lemon, dill/mint, salt & pepper. Chill.
3. Assemble Salad ๐ Layer greens, tomatoes, cucumber, onion, olives & feta. Top with grilled chicken and a big spoon of tzatziki.
๐ก Tips
◾️Drain cucumber well for creamy tzatziki.
◾️Marinate chicken longer for deeper flavor.
◾️Add quinoa or couscous for a heartier meal.
๐ฅ Serving idea: Delicious with warm pita bread or as a healthy power bowl with rice or quinoa.
