▶️ Spicy Garlic Butter Chicken:

๐Ÿ”น️1 lb (450g) boneless, skinless chicken thighs or breasts, cut into 1-inch pieces

๐Ÿ”น️2 tbsp unsalted butter

๐Ÿ”น️4 garlic cloves, minced

๐Ÿ”น️1–2 tsp chili garlic sauce (like Huy Fong – adjust to taste)

๐Ÿ”น️Salt & freshly cracked black pepper


▶️ Creamy Cajun Corn Alfredo Sauce:

๐Ÿ”น️2 tbsp unsalted butter

๐Ÿ”น️3 garlic cloves, minced

๐Ÿ”น️1½ cups (350ml) heavy cream

๐Ÿ”น️½ cup (120ml) chicken broth

๐Ÿ”น️1 tbsp Cajun seasoning (adjust to taste)

๐Ÿ”น️1 cup (240ml) canned or frozen corn (thawed if frozen), plus 2 tbsp for topping

๐Ÿ”น️1 cup (240ml) grated Parmesan cheese

๐Ÿ”น️Salt & freshly cracked black pepper, to taste


✨ Toppings:

◾️½ cup (120ml) fire-roasted corn

◾️2–3 green onions, thinly sliced

◾️½ tsp smoked paprika


๐Ÿ‘จ‍๐Ÿณ Instructions:

✅️1. Cook the Pasta:

Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente.

Before draining, save ½ cup (120ml) of the pasta water.


✅️2. Make the Garlic Butter Chicken:

While pasta cooks, season chicken with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6–8 minutes, stirring occasionally, until golden and cooked through.

Lower the heat, add butter, minced garlic, and chili garlic sauce. Stir for about 1 minute until the garlic is fragrant and chicken is well coated. Keep warm.


✅️3. Make the Creamy Cajun Corn Alfredo:

In a separate large skillet or saucepan, melt butter over medium heat.

Add garlic and sautรฉ for 30 seconds until fragrant.

Pour in the heavy cream and chicken broth, bring to a gentle simmer.
