Sausage and Vegetable Stew



❤️A cozy, rustic French dish that warms the soul.


👉Ingredients (serves 4)

↪️Main ingredients:

◾️4 smoked sausages (or Morteau sausages, if available)

◾️1/2 green cabbage, sliced into strips

◾️4 potatoes, peeled and cut into large chunks

◾️4 carrots, peeled and chopped

◾️1 onion, thinly sliced

◾️2 garlic cloves, minced

◾️1 bouquet garni (a bundle of thyme, bay leaf, and parsley)

◾️1.5 liters (about 6 1/3 cups) of vegetable or chicken broth

◾️Salt and pepper to taste

◾️Fresh chopped parsley (for garnish)


👉Optional additions:

▶️Bacon or pancetta for extra smoky flavor

▶️Crusty bread, for soaking up the broth


👉Instructions:

✅️1. Brown the sausages:

Heat a bit of oil in a large pot or Dutch oven over medium heat. Brown the sausages on all sides until nicely colored. Remove and set aside.


✅️2. Cook the vegetables:

In the same pot, sauté the onion for about 2 minutes until translucent. Add garlic and cook for 1 minute more.

Add the cabbage, carrots, and potatoes. Stir and cook for about 5 minutes to let flavors start to build.


✅️3. Add broth and seasonings:

Return sausages to the pot. Pour in the broth to cover the ingredients.

Add the bouquet garni, then season with salt and pepper.


✅️4. Simmer:

Cover and let simmer gently over low heat for 45 minutes to 1 hour, until the vegetables are tender and the flavors well blended.

Check tenderness with a fork.


✅️5. Final touches:

Remove the bouquet garni. Taste and adjust seasoning.

Sprinkle with fresh parsley before serving.
