๐Ingredients:
๐น️1 lb ground beef
๐น️1 onion, diced
๐น️2 cloves garlic, minced
๐น️1 bell pepper, diced
๐น️1 cup corn
๐น️1 cup black beans (rinsed and drained)
๐น️1 cup diced tomatoes
๐น️1 cup shredded cheddar cheese
๐น️1 cup shredded mozzarella cheese
๐น️½ cup barbecue sauce
๐น️¼ cup ketchup
๐น️¼ cup mustard
๐น️1 tsp chili powder
๐น️Salt and pepper to taste
๐น️1 can (package) refrigerated biscuit dough
๐Instructions:
✅️1. Preheat your oven to 375°F (190°C).
✅️2. In a large skillet, cook the ground beef over medium heat until browned.
✅️3. Add onion, garlic, and bell pepper. Cook until the veggies are soft.
✅️4. Stir in the corn, black beans, tomatoes, barbecue sauce, ketchup, mustard, chili powder, and a little salt and pepper. Let it simmer for about 5 minutes.
✅️5. Pour the mixture into a 9x13 inch baking dish, spreading it evenly.
✅️6. Sprinkle the cheddar and mozzarella cheese on top.
✅️7. Flatten the biscuit dough and lay the pieces over the cheese.
✅️8. Bake for 25–30 minutes or until the biscuits are golden and cooked through.
✅️9. Let it cool for a few minutes, then serve hot and enjoy!
