Tender Cranberry Beef Roast 🍖🍇


👉Ingredients:

- 3 to 4 lbs beef roast (chuck or brisket)

- 1 cup vinegar

- 1 cup cranberry juice (100% juice, no added sugar)

- 1/2 cup brown sugar

- 1 medium onion, chopped

- 4 cloves garlic, minced

- 2 tablespoons olive oil

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- Salt and pepper to taste

- Fresh cranberries (for garnish, optional)

- Fresh parsley, chopped (for garnish, optional)


👉Instructions:


✅️1. Prepare the Marinade:

 ◾️  In a bowl, whisk together vinegar, cranberry juice, brown sugar, minced garlic, thyme, rosemary, salt, and pepper. Set aside.


✅️2. Sear the Roast:

  ◾️ In a large skillet, heat olive oil over medium-high heat. Season the beef roast with salt and pepper. Once the oil is hot, sear the roast on all sides until browned (about 3-4 minutes per side). This step adds flavor.


✅️3. Combine Ingredients:

◾️   Place the chopped onion in the bottom of a slow cooker. Transfer the seared roast on top of the onions. Pour the marinade over the roast, ensuring it is well coated.


✅️4. Cook the Roast:

 ◾️  Cover the slow cooker and cook on low for 6-8 hours or until the beef is tender and easily pulls apart with a fork. If using an oven, preheat to 325°F (160°C) and roast in a covered Dutch oven for about 3-4 hours.


✅️5. Rest and Slice:

   ◾️Once cooked, remove the roast from the slow cooker or Dutch oven and let it rest for 10-15 minutes before slicing. This helps retain the juices.


✅️6. Serve:

  ◾️ Slice the roast and serve it with the cooked onions and some of the marinade drizzled over the top. Garnish with fresh cranberries and chopped parsley if desired.
