- 4 boneless, skinless chicken breasts

- 1 cup frozen corn kernels, thawed
- 2 limes, juiced and zested
- ½ cup freshly chopped cilantro
- 1 cup chicken broth
- 1 tablespoon olive oil
- Additional chopped cilantro for garnish
👉Directions:
✅️1. Season the chicken breasts with salt, pepper, cumin, garlic powder, and onion powder.
✅️2. Drizzle the bottom of your slow cooker with olive oil and lay the seasoned chicken breasts in a single layer.
✅️3. Scatter the corn kernels over the chicken.
✅️4. Whisk together the lime juice, zest, and chicken broth, then pour this citrusy herbed broth over the corn and chicken.
✅️5. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is tender and fully cooked.
✅️6. Once done, use two forks to shred the chicken in the pot gently. Stir in the freshly chopped cilantro.
✅️7. Let everything sit together on the 'Warm' setting for an additional 10 to 15 minutes to meld the flavors.
