Simple Slow Cooker Beef Roast



👉Ingredients:

▶️3–4 lb chuck roast

▶️1 tablespoon olive oil

▶️4 carrots, peeled and cut into chunks

▶️3 large potatoes, peeled and cubed

▶️1 onion, chopped

▶️3 cloves garlic, minced

▶️2 cups beef broth

▶️1 tablespoon Worcestershire sauce

▶️1 teaspoon dried thyme

▶️1 teaspoon dried rosemary

▶️Salt and pepper, to taste

▶️2 tablespoons cornstarch (optional, for thickening)


👉Directions:

✅️Season the chuck roast generously with salt and pepper on all sides.


✅️In a large skillet, heat olive oil over medium-high heat and sear the roast on all sides until browned, about 3–4 minutes per side.


✅️Place carrots, potatoes, and onion in the bottom of the slow cooker. Add the seared roast on top.


✅️In a small bowl, mix beef broth, Worcestershire sauce, garlic, thyme, and rosemary. Pour mixture over the roast and vegetables.


✅️Cover and cook on low for 8 hours or until meat is tender and shreds easily with a fork.


✅️Optional: For a thicker gravy, remove 1/2 cup of the cooking liquid, whisk in cornstarch, and return it to the slow cooker for the last 30 minutes of cooking.


✅️Serve hot with vegetables and spoon the flavorful broth over the meat.
