๐Ingredients for Chicken Fritters:

๐น️⅓ cup mayonnaise
๐น️⅓ cup all-purpose flour (or use cornstarch/potato starch for gluten-free)
๐น️4 oz shredded mozzarella cheese (about 1⅓ cups)
๐น️1½ tablespoons chopped fresh dill
๐น️½ teaspoon salt (or to taste)
๐น️⅛ teaspoon black pepper
๐น️2 tablespoons light olive oil (or any high-heat oil) for frying
๐น️Optional Garlic Aioli Dip:
๐น️⅓ cup mayonnaise
๐น️1 garlic clove, minced or pressed
๐น️½ tablespoon lemon juice
๐น️¼ teaspoon salt
๐น️⅛ teaspoon black pepper
๐Preparation:
▶️1. Prepare Chicken: Dice the chicken breasts into small pieces (about ⅓-inch thick). It’s easier to cut if the chicken is slightly frozen.
▶️2. Make the Batter: In a large bowl, add the chopped chicken, eggs, mayonnaise, flour, shredded cheese, dill, salt, and pepper. Mix everything well. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for best results.
▶️3. Cook the Fritters: Heat a non-stick skillet over medium heat. Add oil. Once hot, scoop the chicken mixture using a heaping tablespoon and place it in the pan. Flatten each slightly with the back of the spoon. Cook uncovered for 3–4 minutes on one side, then flip and cook another 3 minutes until golden brown and cooked through.
▶️4. Make the Garlic Aioli (if using): Mix mayonnaise, garlic, lemon juice, salt, and pepper in a small bowl until smooth.

To check if the fritters are fully cooked, cut one open — the chicken should be white all the way through.
If the outside is browning too fast, lower the heat.
