Fajita Chicken Casserole

 



👉Ingredients:

🔸️1.5 lbs boneless skinless chicken breasts, cut into strips

🔸️1 tablespoon olive oil

🔸️1 red bell pepper, sliced

🔸️1 green bell pepper, sliced

🔸️1 yellow bell pepper, sliced

🔸️1 small red onion, sliced

🔸️1 tablespoon fajita seasoning

🔸️1 cup sour cream

🔸️½ cup cream cheese, softened

🔸️1 cup shredded cheddar cheese

🔸️1 cup shredded Monterey Jack cheese

🔸️1 teaspoon garlic powder

🔸️Salt and pepper to taste

🔸️Fresh cilantro, chopped, for garnish


👉Directions:

↪️Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.


↪️Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.


↪️In the same skillet, sauté bell peppers and onion until softened, about 4–5 minutes.


↪️In a large bowl, combine cooked chicken, sautéed vegetables, fajita seasoning, sour cream, cream cheese, garlic powder, salt, and pepper. Mix well.


↪️Spread the mixture evenly in the prepared baking dish. Top with shredded cheddar and Monterey Jack cheeses.


↪️Bake uncovered for 20–25 minutes until bubbly and golden on top.


↪️Let cool slightly before serving. Garnish with chopped cilantro.
