Spicy Sausage & Veggie Soup
๐Ingredients:
๐ธ️1 lb (450g) spicy sausage, sliced
๐ธ️1 tbsp olive oil
๐ธ️4 cups chopped cabbage
๐ธ️1 cup chopped celery
๐ธ️1 cup shredded carrots
๐ธ️1 cup spinach or kale
๐ธ️4 cups beef or chicken broth
๐ธ️1 can (14.5 oz / 400g) diced tomatoes
๐ธ️1 tbsp tomato paste
๐ธ️2 garlic cloves, minced
๐ธ️1 tsp paprika
๐ธ️1 tsp Italian seasoning
๐ธ️Salt and pepper to taste
๐Instructions:
✅️1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned.
✅️2. Add garlic, celery, and shredded carrots. Sautรฉ for about 2 minutes.
✅️3. Stir in the chopped cabbage, diced tomatoes (with juice), broth, tomato paste, paprika, Italian seasoning, salt, and pepper.
✅️4. Bring to a boil, then reduce heat and let it simmer for 20–30 minutes, until vegetables are tender.
✅️5. Add spinach or kale and simmer for another 5 minutes.
✅️6. Serve hot and enjoy!
